Founded in 1975, Seikiri Shochu Distillery is a rare sake brewery run by the local municipality. All of its brands are brewed within the town of Kiyosato, Hokkaido.

Most of Kiyosato's agricultural produce used to be shipped out as processed raw materials (starch, wheat flour, beet sugar). As a result, there was a growing demand from the townsfolk for ""original specialty products using Kiyosato's agricultural produce,"" which led to the start of shochu production.

After much trial and error, they succeeded in creating Japan's first potato shochu, ""Hokkaido Kiyosato."" This shochu boasts a delicate sweetness from the potatoes, a gentle flavor, and a unique, refreshing aroma.

The crystal-clear water from the foot of Mount Shari and the fertile land that withstands extreme cold contribute to nurturing the abundant potatoes used in the production. They have established quality standards for contracted farming with local farmers, ensuring that the quality of local ingredients directly influences the product's value.

Through this circular system of relying on the region's blessings and enhancing these blessings, the distillery is constantly pursuing better flavors and increasing the value of their specialty products. With handcrafted brewing and careful aging, they deliver shochu of guaranteed quality.
