The Maoi Distillery, which opened in May 2022, is not only a relatively new distillery in Hokkaido but also a rare entity worldwide in that it is also a winery. It all began in 2006 with a plot of land owned by Mr. Mukai at the time, which was often referred to as the ""smallest winery in Japan,"" covering an area of about 0.5 hectares. In 2017, MAOI Co., Ltd. took over and established the ""Maui Freedom Hill Winery.""

Following this, land development continued, and in 2022, they introduced a hybrid still from the Scottish company Forsyths, and began the production of brandy, fruit brandy, and whiskey.

In July 2022, they carried out their first distillation and released a portion of the new-make whiskey, named ""Metamorphosis - The Origin,"" without aging it in wooden barrels. This new-make whiskey is a rare find with very limited availability on the market. In fact, all 1500 bottles were sold out instantly. Despite being the first distillation, it quickly gained popularity and received high praise from various quarters.

Key elements integral to the Maoi Distillery's production process include their use of high-quality natural water called ""Maoi Meisui,"" a meticulous method that avoids heavy automation, and their unwavering commitment to hard work amidst the challenging natural conditions. These are crucial factors for their spirits' quality, which has been consistently improving since their first distillation.

Note: The term "Maoi Meisui" translates to "Maoi Spring Water" or "Maoi Natural Water".
